Duck Crossing: A Unique Philosophy About Fine Dining Over the last fifteen years, Duck Crossing has offered a variety of services, including for many years running a full service "New York Style" deli. Wautoma has grown and changed, as we have. What Marty and Sara realized over the last 18 months, is that our greatest satisfaction is offering dinners. We aren't driven by making money, although, of course, we have to pay the mortgage and the electric bill. We do, however, truly enjoy getting to know our guests. When you make a reservation, the table is yours for the night. We don't pressure you to leave so we can turn the table. We rarely seat more than 24 people in an evening, and the reservations are scheduled at 15 minute intervals so that we can greet you and find out what's new since the last time we saw you. After dinner service, Marty and Sara come out of the kitchen and visit. It's not unusual to get a lively political discussion going, or, since we're all foodies, we start taking about recipes or resources we've discovered. It truly feels like a dinner party! |
Wines & Spirits Enhance Fine Dining Experience We also offer a carefully chosen selection of wines & spirits that can enhance your food experience. With a full liquor license, you can enjoy a cocktail before your meal at Duck Crossing, and enjoy a lovely bottle of wine with your dinner. If you're a collector, we can help you expand the wines & spirits in your cellar or encourage you to join our wine club. We know Wautoma is a small town in Central WI, but at Duck Crossing we enjoy learning about wines & spirits. It's not unusual that Marty and Sara, the owners, will open a bottle to share with their guests after dinner so we can all try something new. |
Developing Menus and Adapting Recipes to Meet Special Needs Another unique aspect of our services is the attention to detail that we offer to our guests. We work diligently to develop our recipes and adapt our menus to accommodate a wide variety of diverse food requirements. We serve our price fixe menu family style, but we are glad to develop or adapt our recipes for guests who have food allergies or special dietary needs. We can adapt or develop recipes for those who are vegetarian or vegan. This year we've added a garden, and we are trying to be more conscious of the sources of the food we use. We are composting vegetable materials from the kitchen and featuring what we grow in the recipes we design for our menus. Of course, this is Wisconsin, and we have to work with our short growing season. But, we are consistenly trying to work with smaller producers who ate better able to control the food that comes to our table. |
